Leftover fruit makes for the perfect recipes this summer.

Number one

FRUITY ICE CUBES

FRUITY ICE CUBES

Put chopped or whole fruit into ice cube trays; fill up the tray with coconut water or white grape juice and freeze until firm. These fruity cubes don't dilute your drink as much as water and look extra sharp floating in your glass.

Number two

FRUIT CEREAL

FRUIT CEREAL

In a bowl, mix cubed fruit or fresh berries with pomegranate seeds for crunch. Pour coconut water over the fruit and add ice cubes. The result: a fruity cereal swap.

Number three

MEXICAN PALETAS

MEXICAN PALETAS

What are paletas? They're Mexican ice pops often made from fruit with creamy additions like Greek yogurt, condensed milk or dulce de leche. Blend your fruit with fresh mint or lime zest and layer into popsicle moulds. You can also use coconut milk for a variety of flavours.

Tip: Don't have a popsicle mould? Use a plastic cup, put a popsicle stick in the centre and stick it in the freezer.
