Dragon Fruit is a mild, sweet fruit that pairs well with other tropical fruit, but also acidic fruits like citrus and tart apples. Prepare a salad with dragon fruit, papaya, orange slices, strawberries and a little grated lime zest. Top with toasted coconut flakes.
Tip: A dash of cayenne and a pinch of salt mixed into the salad is a game-changer!

Make a dragon fruit and blueberry chia jam that is low in sugar but high in taste. Cube your dragont fruit and mix it with fresh or frozen blueberries, maple syrup and water together over heat. Let it thicken while stirring occassionally and mashing with a wooden spoon to help the fruit break down. Add chia seeds and let cool. Store in the fridge for up to a week.
